Nigerian Catering in London
What is Nigerian cuisine and what are its origins?
Nigeria is home to over 184 million people, making it the world’s seventh most populous country and earning it the nickname “The Giant of Africa.” With more than 500 different ethnic groups, it can be difficult to pinpoint a specific cuisine as being “Nigerian.” Each region has its own favourites depending on their customs, traditions and religion.
Indigenous Nigerian crops include rice, millet and lentils. These were augmented by the growth of trade routes in the fifteenth century, bringing Portuguese, British and Dutch merchants to the West of Africa. Their ships were laden with exotic new ingredients like cassava, beans and maize that were brought back from their voyages to the New World. Asian seasonings like pepper, cinnamon and nutmeg were also introduced by traders from the East and are still a key component of Nigerian cuisine to this day.
Meats, like beef and chicken, sweet potatoes and plantain form the backbone of a cuisine that likes to keep things simple while packing one hell of a flavour punch. Favourite dishes include:
Jollof rice - a simple dish comprising rice and what is lovingly referred to as “TPO” (tomatoes, peppers and onions) plus as many scotch bonnet peppers as you dare...
Suya - hailed as a unifying force in Nigeria, the secret of these skewered grilled meats lies in the spice mix, known as yaji. Just don’t ask for the recipe, as it is a closely guarded secret in each region.
Akara - these deep fried bean cakes are eaten for breakfast or as a light snack during the day.

Vegan & vegetarian Nigerian catering
Many of Nigeria’s most beloved dishes are naturally vegetarian or vegan.
Plenty of those that aren’t can easily be adapted to suit those diets.
Jollof rice and akara (both mentioned above) are naturally vegan and would go nicely with these Nigerian staples:
Moin moin - no Nigerian celebration is complete without these parcels of ground brown beans with onions, peppers, palm oil and spices, steamed in banana leaves.
Pepper soup - the traditional recipe for this spicy, aromatic broth involves using all parts of the chosen animal, but it’s just as hearty using only the vegetables (and plenty of scotch bonnet peppers!)
Efo riro - this rich spinach stew (literally translated as “mixed greens”) goes beautifully with rice or mashed sweet potatoes.
